Ah, cobbler! Who doesn't love warm cobbler right out of a Dutch oven, right… I have a dear buddy that is the king of cobblers so I got inspiration from him and do my own twist on the campfire favorite!
I'm not a fan of canned fruit so I always try to use fresh fruit, when possible. This particular recipe calls for blackberries AND blueberries hence the name…
Ingredients
-White cake mix (1 box)
-Sprite or 7-Up (12 oz)
-Blackberries (1 pint)
-Blueberries (1 pint)
-Butter (2 TBS)
-Brown Sugar (1/4 cup)
Start with a small, seasoned Dutch oven and spray the inside with olive oil or use a non stick liner…
Pour in rinsed blackberries and blueberries (add enough to cover the bottom of the Dutch oven)…
On top of the berries add the box of cake mix and level it out…
Add 12 Oz of sprite (don't pour hard. Just lightly pour over the dry cake mix until thoroughly wet)…
Dice up the butter and evenly place in top of cobbler…
Then sprinkle the brown sugar over top of everything (I like this because it adds a slight glaze to the top when baked)…
Cover and place in an oven preheated to 350° or place on a hot bed of coals with a shovel full of coals on top…
Bake for approximately 1 hour (I normally check it after 45 minutes, this one cooked for 1 hr 15 minutes)…
Remove from the oven and let cool. Serve with ice cream, whip cream, or just as it is!
